Authentic Tiramisu Recipe

Step No. 1:

First, make two cups of coffee, one for yourself to enjoy and the other to soak the ladyfingers. In order for the recipe to be as close as possible to the original, it would be preferable to use an espresso machine. In case you don’t have it, which is quite understandable, regular instant coffee will do the job.

You can even add rum or Marsala wine to the coffee, but it is not mandatory. Since not everyone likes it, it’s completely okay if you skip it. Tiramisu will be delicious even without a single drop of liquor.

Step No. 2:

Prepare the eggs by separating the whites from the yolks. When you separate them, first beat the egg whites until stiff peaks form.

How do you know that the egg white is well beaten? It’s very simple, turn the bowl upside down, if you see that the egg whites stand firm or do not run, you are done whipping. In addition, you have to be careful, as just one drop of yolk in the egg whites is enough for the process to fail.

Step No. 3:

Choose another clean bowl and beat the egg yolks with sugar in it. Let the process continue for at least 3-5 minutes or until smooth.

Step No. 4:

It’s finally time for delicious mascarpone! Fortunately, you don’t need to do much, just work it with a spoon to make it softer. Do not skimp on it, in order for the recipe to be authentic you must choose high-quality, creamy, and thick mascarpone.

Step No. 5:

Once you finish beating the egg yolks, add the cheese. Work with the mixer on low speed for 2 to 3 minutes.

Step No. 6:

Add previously beaten egg whites. We recommend not using a mixer, not even on the lowest speed, but a wooden spoon or a spatula. Also, mix from the bottom up, not in a circular motion as usual.

Now we move on to the main part of this article, that is, to the assembly. So let’s go into more detail.

 Step No. 7:

Keep in mind that you can have as many layers of ladyfingers and mascarpone cream as you want, it all depends on the width and depth of your pan.

Remember the coffee and liquor from the beginning of the story? It’s time to use them, so pour them into a shallow bowl and dip in the ladyfingers for 1-2 seconds on each side. Try not to overdo it, as this can result in a cake that is too rich in coffee and runny.

Step No. 8:

Then, arrange the ladyfingers in the pan in an even layer.

Step No. 9:

Next, add half the mascarpone mixture or less, depending on how many layers you plan to have, spread evenly, and decorate with unsweetened cocoa powder.

Step No. 10:

Repeat the process until you run out of material or reach the desired number of layers. It’s completely optional. In the end, sprinkle generously with cocoa powder and leave it in the refrigerator for several hours, preferably overnight.

That’s it, now you know how to make an authentic tiramisu recipe!
