- 0.66 lb of ladyfingers (about 30 pieces)
- lb of mascarpone cheese
- 4 eggs
- 1/2 cup of granulated sugar
- 1 ¼ cup of coffee
- tablespoons of Marsala wine or rum (optional)
- Cocoa powder (preferably unsweetened)
Step No. 1:
First, make two cups of coffee, one for yourself to enjoy and the other to soak the ladyfingers. In order for the recipe to be as close as possible to the original, it would be preferable to use an espresso machine. In case you don’t have it, which is quite understandable, regular instant coffee will do the job.
You can even add rum or Marsala wine to the coffee, but it is not mandatory. Since not everyone likes it, it’s completely okay if you skip it. Tiramisu will be delicious even without a single drop of liquor.
Step No. 2:
Prepare the eggs by separating the whites from the yolks. When you separate them, first beat the egg whites until stiff peaks form.
How do you know that the egg white is well beaten? It’s very simple, turn the bowl upside down, if you see that the egg whites stand firm or do not run, you are done whipping. In addition, you have to be careful, as just one drop of yolk in the egg whites is enough for the process to fail.

Choose another clean bowl and beat the egg yolks with sugar in it. Let the process continue for at least 3-5 minutes or until smooth.

Add previously beaten egg whites. We recommend not using a mixer, not even on the lowest speed, but a wooden spoon or a spatula. Also, mix from the bottom up, not in a circular motion as usual.
