  • 3 peaches
  • 1/2 cup of sugar
  • 1.5 cups of heavy cream
  • 1 cup of whole milk
  • 1 teaspoon of vanilla extract (preferably pure)
  • 1/2 cup sugar
  • A pinch of salt (preferably kosher)
  • 5 egg yolks

Instructions

Step #1: First up, you need to get rid of the skin of the fruit, therefore, get down to peeling. Cut the peaches into small pieces, we like when we cut them in half and put them in a pot of boiling water for about one minute.

Using a slotted spoon, remove them from the hot water and place them in a bowl of ice water. After about a minute, they will be ready to peel. Cut them into small pieces, sprinkle with sugar and let them sit for up to 30 minutes. In this way, you will highlight the natural juices and the sweetness of the taste.

Step #2: Put the peaches in a blender or multi-purpose processor, whatever you have on hand, and puree. Leave aside to reach room temperature.

Step #3: Choose a saucepan of appropriate size, put it on the stove, and combine cream, milk, salt, sugar, and vanilla extract in it. Cook at a moderate temperature for a few minutes, i.e. just before boiling, and remove from heat once the sugar has dissolved.

Step #4: Place yolks in a bowl and whisk them with a fork. Add the previously prepared mixture of cream, milk, salt, sugar, and vanilla extract to them, 1/3 at a time, and whisk until well combined.

It is preferable to do this while the mixture is still hot. This process is called “tempering” and actually involves heating the eggs without scrambling them.

Step #5: Return the pan to the stove and cook for another 10 minutes while slowly stirring. It is best to cook at a moderate temperature so that it doesn’t burn. When cooked, remove from heat and add the peach puree. Keep in the refrigerator until it cools completely, this usually takes about 6 hours.

Pro tip: If you want to shorten the cooling time, simply take it out of the freezer more often and stir. In this way, you can distribute the heat more evenly and speed up the process.

Step #6: Now, let’s move on to the most fun part of this homemade peach ice cream recipe, the actual making. So, let’s get to the point. Pour the ice cream base into the ice cream maker, churning it as desired. Usually, the process takes about 30 minutes.

Step #7: Transfer this super-delicious homemade ice cream to an airtight container and freeze briefly for a soft consistency or overnight for traditional ice cream.
