With the mixture on low, mix in the chopped pecans. Cover the cookie dough and leave it in the fridge for 30 minutes, or up to 3 days.

  • 1 ¾ cups powdered sugar(210 g)
  • 1 cup almond flour(95 g), finely ground
  • 1 teaspoon salt, divided
  • 3 egg whites, at room temperature
  • ¼ cup granulated sugar(50 g)
  • ½ teaspoon vanilla extract
  • 2 drops gel food coloring of choice
  • Store-bought buttercream

In order to make the macarons, firstly the powdered sugar, almond flour and a teaspoon of salt need to be blended in a food processor until it is extra fine.

This mixture should then be sifted into a big bowl.

A separate bowl should be used for beating the egg whites and the other half teaspoon of salt with an electric hand mixer until soft peaks form.

After that, the granulated sugar should be added gradually until it is fully integrated. The electric hand mixer should then be used to beat until stiff peaks form.

The vanilla and food coloring should then be added and mixed until incorporated.

To complete the preparation, ⅓ of the sifted almond flour mixture should be added to the beaten egg whites and folded using a spatula until combined.

The last bit of almond flour should be added and the batter should be folded slowly until it can form a figure 8 when held up by a spatula.

Pipe the macarons onto parchment paper in 1½-inch (3-cm) circles, leaving at least 1-inch (2-cm) in between each one.

Knock the baking sheet onto a flat surface 5 times to get rid of air bubbles. Leave the macarons at room temperature for half an hour to an hour, until they feel dry when touched.

Preheat the oven to 300˚F (150˚C) before baking the macarons for 17 minutes until the edges are nicely risen and they don’t stick to the parchment paper.

Transfer the macarons to a wire rack to let them cool completely prior to filling them.

Place the buttercream into a piping bag attached with a round nozzle.

Put a dollop of buttercream on one macaron shell and cover it with the second macaron shell to form a sandwich.

Do the same with all the remaining macaron shells and buttercream.
