Brown Butter Pecan
These Brown Butter Pecan Cookies are like one-man-show: they’re buttery, they’re crunchy, they’re chewy, they’re sweet and salty, and they’ve got a bit of a nutty kick from the pecans.
What more could you ever want from a cookie? These cookies are the perfect treat for people who love a lot of texture in their baked goods.
They’re hands-down one of the tastiest cookie flavors out there.
Ingredients
- 1/2 cup butter, at room temperature
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1 teaspoon cornstarch
- 1 cup pecans, chopped
Take a medium-sized bowl and add the flour, cornstarch, baking soda, and salt.
Put this aside for now. Get a large bowl and use a hand-held mixer or a stand mixer with the paddle attachment to mix together the butter, brown sugar, and granulated sugar until the combination is creamy – this should take around 2-3 minutes.
Make sure to check the sides and bottom of the bowl and scrape them if necessary.
Add the eggs and vanilla and do the same process of scraping the sides and bottom of the bowl. With the mixer on low speed, slowly add the dry ingredients to the wet ingredients in small portions (for tidiness). The cookie dough should become thick and sticky.
With the mixture on low, mix in the chopped pecans. Cover the cookie dough and leave it in the fridge for 30 minutes, or up to 3 days.
If the cookie dough has been in the fridge for longer than an hour, let it sit at room temperature for 10-11 minutes before baking.
Preheat the oven to 350°F and line two baking sheets with silicone baking mats or parchment paper. Gently roll balls of dough, 2 Tablespoons of dough each.
Salted Caramel
These Salted Caramel Cookies are one of the most delicious, decadent cookies you’ll ever make. They’ve got the perfect texture, they’re super chewy and crispy, and they’re bursting with salted caramel flavor.
If you like caramel, you’re sure to love these cookies. If you like salted caramel, you’re sure to go absolutely crazy for them.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup butter, at room temperature
- 1 large egg yolk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup caramel sauce
- 1/2 cup chopped pecans
- 1/4 cup coarse sea salt
Preheat the oven to 390°F (unless you are refrigerating the dough).
Using a large bowl, beat the butter, brown sugar, and sugar for about 4 minutes, making sure to scrape the sides of the bowl regularly.
Add the egg, egg yolk, and vanilla and mix for another minute. Incorporate the caramel. Mix in the flour, baking powder, baking soda, and salt.
If you are going to sprinkle sea salt flakes on top of the cookies, decrease the salt to ½ teaspoon. If you have the time, chill the dough for at least 30 minutes as this will prevent the cookies from spreading too much.
Refrigerating it for 24 hours is even better.
Use a light-colored baking sheet if possible. Make balls with the dough and place them on a parchment paper-lined baking sheet.
Bake for 8-11 minutes or until they are lightly golden on the sides and remove them from the oven.
Let them cool for a few minutes and then drizzle caramel all over each cookie before serving. Sprinkle with sea salt flakes if desired.
Maple Bacon
These Maple Bacon Cookies are a sweet and salty masterpiece. They’ve got a maple-flavored cookie base with bits of bacon baked right into them for a savory touch.
They’re like little bite-sized bacon-maple cakes that you can pop in your mouth at any given time. They’re a great savory treat to accompany your sweet dessert selection at a party or potluck. They’re sure to be a crowd-pleaser.
Ingredients
- 2 cups all-purpose flour, sifted
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup butter, at room temperature
- 1 cup granulated sugar
- 2 tablespoons maple syrup
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup bacon, cooked and chopped
STEP 1. Bake the bacon in the oven until crispy
STEP 2.Create the maple mixture
Using a stand mixer, blend the butter and brown sugar until it is creamy and fluffy. Add salt, eggs, and maple extract. Gradually incorporate the flour, baking soda, and baking powder.
STEP 3. Include the bacon and bake
Fold in the bacon and semi-sweet chocolate chips. Put the mixture in large tablespoons onto a prepped baking sheet. I prefer to line it with parchment paper to keep it non-stick and make the cleaning process easier.
Place the baking sheet in a 375 degree oven for 10-12 minutes.
Allow a few minutes for the cookies to cool on the baking sheet before transferring them to a wire rack so they can cool completely.
Macaroons
- 1 ¾ cups powdered sugar(210 g)
- 1 cup almond flour(95 g), finely ground
- 1 teaspoon salt, divided
- 3 egg whites, at room temperature
- ¼ cup granulated sugar(50 g)
- ½ teaspoon vanilla extract
- 2 drops gel food coloring of choice
- Store-bought buttercream
In order to make the macarons, firstly the powdered sugar, almond flour and a teaspoon of salt need to be blended in a food processor until it is extra fine.
This mixture should then be sifted into a big bowl.
A separate bowl should be used for beating the egg whites and the other half teaspoon of salt with an electric hand mixer until soft peaks form.
After that, the granulated sugar should be added gradually until it is fully integrated. The electric hand mixer should then be used to beat until stiff peaks form.
The vanilla and food coloring should then be added and mixed until incorporated.
To complete the preparation, ⅓ of the sifted almond flour mixture should be added to the beaten egg whites and folded using a spatula until combined.
The last bit of almond flour should be added and the batter should be folded slowly until it can form a figure 8 when held up by a spatula.
Pipe the macarons onto parchment paper in 1½-inch (3-cm) circles, leaving at least 1-inch (2-cm) in between each one.
Knock the baking sheet onto a flat surface 5 times to get rid of air bubbles. Leave the macarons at room temperature for half an hour to an hour, until they feel dry when touched.
Preheat the oven to 300˚F (150˚C) before baking the macarons for 17 minutes until the edges are nicely risen and they don’t stick to the parchment paper.
Transfer the macarons to a wire rack to let them cool completely prior to filling them.
Place the buttercream into a piping bag attached with a round nozzle.
Put a dollop of buttercream on one macaron shell and cover it with the second macaron shell to form a sandwich.
Do the same with all the remaining macaron shells and buttercream.
